Here you can find three paella recipes for all tastes. They are my mother's recipes and cooking does not get more authentic than this. Paella is originally from the l'horta nort (area just north of Valencia city), in fact its origins can be found in Northern Africa during the reign of the Moors. Other regions sometimes use different ingredients and each village can often claim to have the most authentic version, competition is both stiff and fierce. We'll leave it up to you any extras you may choose to add. Enjoy, and don't forget to email any funky pictures you would like to share with the rest of the paella eating fraternity.

If you want to try something different we have a recipe for "Fideua", paella with pasta. The most popular "fideua" is the seafood paella, very similar to the normal seafood paella, and it usually comes accompanied with "allioli" (garlic mayonnaise). You can always try making fideua with other ingredients like chicken and chorizo, etc....... enjoy!!
